SUMMER RADISH SALAD

-  1/2 cup lemon juice
-  1 tablespoon olive oil
-  2 tablespoons chives, raw and chopped
-  2 tablespoons parsley, dried or fresh

-  4 cups radish, sliced
 
Directions
 
Mix all ingredients together well and

HAM STUFFED ZUCCHINI

Ingredients
 
-  8 small zucchini
-  4 cups low-fat ham, chopped fine
-  2 eggs or egg substitute, lightly beaten
-  1 teaspoon basil
-  1/2 cup green pepper, chopped
-  1/4 cup low-fat Swiss cheese, shredded
-  1 tablespoon canola oil
 
Directions
 
With a sharp knife, cut off the ends of the zucchini
and hollow out the inside, removing the pulp.
 
In a mixing bowl, combine the ham, eggs,
basil, green pepper and cheese.
 
Pack 1/2 cup of this mixture into each zucchini,
using fingers or a teaspoon.
 
Place the zucchini in a baking dish coated
with a non-stick cooking spray.
 
Brush the stuffed zucchini with oil.
 
Bake in a preheated 325 degree F oven for 45 minutes.
The zucchini will be fork-tender.

-  1 cup cantaloupe chunks
-  1 cup honeydew chunks
-  1/4 cup dry white wine
-  2 Tbsp orange juice
-  2 Tbsp sugar
-  1 cup low-fat buttermilk
-  1/2 cup blueberries
 
Directions
 
In a food processor or blender, combine the melons,
wine, juice and sugar. Puree until almost smooth.
Add buttermilk and process again.
Top each serving with blueberries.

-  1 small eggplant, cut into 1/2-inch cubes
-  Salt and freshly ground black pepper
-  2 Tbsp. extra virgin olive oil
-  2 large red bell peppers, seeded and cut into 3/4-inch pieces
-  4 small zucchini, sliced
-  1 onion, coarsely chopped
-  4 cloves garlic, minced
-  1 lb. tomatoes, chopped,
   OR 1 can (28 oz.) whole tomatoes, drained and chopped
-  1/3 cup chopped fresh basil
 
Directions
 
Sprinkle eggplant lightly with salt and let
drain in colander for 30 minutes. Pat dry.
 
In non-stick skillet heat 1 tablespoon oil over medium-high
heat. Add eggplant. Stir and cook until soft and browned,
about 6 to 7 minutes. Transfer eggplant to bowl.
 
Add remaining oil to pan and heat until hot. Add red
peppers, zucchini, onion and garlic. Cook vegetables,
stirring, until tender, about 3 to 5 minutes.
 
Mix in tomatoes, basil and eggplant. Stirring occasionally,
cook on low heat 15 to 20 minutes or until all vegetables
are very tender. Add salt and pepper to taste.
 
Ratatouille, a specialty of the Provence region of France,
is a popular and versatile dish that uses large amounts of
produce. The tomatoes and eggplant create a juicy, stew-like
sauce that accentuates the flavors of basil and garlic.
Serve it hot as a side dish or over a grain for an entree.
This version also tastes great when served cold.

DIABETES AND NUTRITION
 
Early diagnosis of diabetes is extremely important. The earlier
it is diagnosed, the sooner steps can be taken to manage the
disease and prevent or delay complications. The Canadian
Diabetes Association recommends routine screening every three
years for everyone age 45 or over and screening every year
for individuals with other risk factors.
 
Diabetes is a disease in which the body cannot properly store
and use food for energy. The fuel that a body needs is called
glucose, a form of sugar. Glucose comes from foods such as
fruit, milk, some vegetables, starchy foods and sugar.
 
To control blood glucose, people with diabetes need to eat
nutritious foods, be physically active and may need to take
pills and/or insulin. Here are some tips to help people
recently diagnosed with diabetes, but they hold true
for anyone seeking a healthier lifestyle.
 
Tips
 
Eat three meals per day at regular times and space meals
no more than six hours apart. You may benefit from a
healthy snack. Eating at regular times helps your body
control blood glucose levels.
 
Eat more high fiber, less refined foods. High fiber cereals
can provide almost half your required daily intake of fiber.
Foods high in fiber may help you feel full and may lower
blood glucose and cholesterol levels.
 
Limit sugars and sweets such as sugar, regular pop, desserts,
candies, jam and honey. Large intakes of sugar may cause
higher blood glucose. Artificial sweeteners can be useful.
 
Limit the amount of high fat food you eat such as fried
foods, chips, and pastries. High fat foods may cause you
to gain weight. A healthy weight helps with blood glucose
control and is healthier for your heart.
 
If you are thirsty, drink water. Drinking regular pop
and fruit juice will raise your blood glucose.
 
Add physical activity to your life. Regular physical
activity will improve your blood glucose control.

CHILLED ROASTED TOMATO SOUP
 
Take on the summer heat with this cool version of tomato
soup, both elegant and easy to prepare. It features plum
tomatoes, which are about the shape and size of eggs and
are specifically grown for making sauce. They are perfect
for this soup.
 
Plum tomatoes are highly flavorful with a solid fleshy content
because they have fewer seed compartments than other varieties
of tomatoes. The Spanish explorer Cortez discovered tomatoes
growing in Montezuma's gardens and brought seeds back to
Europe where they became popular, especially in Italy.
 
Add in some basil, which comes in over 50 varieties, and
you have the beginning of a great soup. Basil is steeped
in folklore. One legend, for example, is that it could cure
the bite of the dragon-like creature known as a basilisk
hence the name basil. This creature was supposed to have
the head of a rooster, the body of a serpent and the wings
of a bat. Accordingly, basil was thought to have medicinal
properties when applied to the bites or stings of animals.
 
Another wonderful herb, with seemingly endless tales, is
rosemary. The name derives from the Latin, ros, meaning dew,
and marinus, meaning sea; hence, one of its common names is
"dew of the sea." The ancient Greeks burned it to drive away
evil spirits and illnesses, and it was believed that a fresh
twig beneath your pillow would prevent nightmares and ensure
a good night's sleep.
 
Balsamic vinegar adds a tangy acidity and you can add a dollop
of sour cream to thicken the soup and give it a somewhat creamy
quality. Chill for a fresh, clean quality and taste that is a
great counterbalance to hot weather.
 
Chilled Roasted Tomato Soup
 
Yield: Makes 4 servings.
Serving size: 1-1/2 cups
 
Ingredients
 
-  1 1/2 Tbsp. olive oil
-  3 pounds plum tomatoes, halved
-  8 cloves garlic
-  2 cups low-sodium organic chicken stock (a little more
   stock may be added, depending on how thick you want the soup)
-  1/4 cup fresh basil, chopped
-  2-3 Tbsp. fresh rosemary
-  1/2 Tbsp. balsamic vinegar
-  Salt and freshly ground pepper to taste
-  Reduced fat sour cream to garnish
-  4 sprigs parsley to garnish
 
Directions
 
Preheat oven to 375 degrees.
 
Rub a little oil on surface of a baking dish. Toss tomatoes
and garlic cloves with remaining oil in bowl. Place tomato
halves and garlic on baking dish. Roast for about 1 hour. (A
little charring is tasty but don't burn the tomatoes or garlic.)
 
Remove from oven. Snip off garlic clove ends. Hand squeeze
(be careful, they are hot!) or use the blade of a butter
knife to squeeze out softened garlic from the skins into
a blender or food processor.
 
Add tomatoes to processor, scraping the bits to capture all
the flavor. Add stock, basil, rosemary and vinegar. Season
with salt and pepper. Blend until smooth. Let cool and place
in refrigerator to chill. Divide among 4 bowls, garnish
with a dollop of sour cream and parsley and serve.

11 g carbohydrate; 5 g protein;
