Banana Chocolate Chip Mini Muffins

Ingredients
 
-  2 cups all-purpose flour
-  2 teaspoons baking powder
-  1/2 teaspoon salt
-  3/4 cup light butter, softened
-  1/3 cup Splenda Sugar Blend
-  1/3 cup packed Splenda Brown Sugar Blend
-  1 teaspoon vanilla extract
-  3 medium ripe bananas, mashed
-  1 large egg
-  1 (12 ounce) package Nestle Toll
   House Semi-Sweet Chocolate Mini Morsels
 
Directions
 
Preheat oven to 350 degrees F. Spray 48 mini-muffin
cups with nonstick cooking spray; set aside.
 
Combine flour, baking powder and salt in medium bowl; set aside.
 
Combine butter, Splenda Sugar Blend, Splenda Brown Sugar
Blend and vanilla in large bowl; beat at medium speed with
a mixer until creamy. Beat in bananas and egg. Gradually
mix in flour mixture; stir in morsels. Spoon batter evenly
into prepared pan, filling cups 2/3 full.
 
Bake 15 to 20 minutes or until wooden pick inserted in center
comes out clean. Cool 10 minutes in pans on wire rack.
Remove muffins from pans to wire rack to cool completely.

-  2 teaspoons baking powder
-  3/4 teaspoon salt
-  1/2 cup light margarine, softened
-  1 cup Splenda Essentials No Calorie Sweetener with Fiber, Granulated
-  1/4 cup honey
-  2 large eggs
-  1 teaspoon vanilla extract
-  1/2 cup 1% low-fat milk
-  1 cup fresh or frozen blueberries, thawed
 
Directions
 
Place oven rack in top 1/3 of oven.
 
Preheat oven to 400F. Line 12 muffin cups with paper
liners. Lightly spray liners with nonstick cooking spray.
 
Sift together flour, baking powder and salt, set aside.
 
Beat margarine at medium speed with an electric mixer
until creamy. Gradually add Splenda Essentials Granulated
Sweetener and honey, beating until light and fluffy. Add
eggs one at a time, beating until blended after each addition.
Stir in vanilla. Alternately add flour mixture and milk,
beginning and ending with flour mixture. Beat at low speed
until blended after each addition. Fold in blueberries.
 
Spoon batter evenly into paper lined muffin cups.
Bake 20 to 22 minutes or until golden. Remove
from pan immediately and cool on wire rack.

baking soda, and cinnamon together in a medium-sized
mixing bowl. Set aside.
 
Mix buttermilk, melted butter, eggs and orange zest
together in a small mixing bowl. Add to flour mixture.
Mix gently to combine. Add walnuts and cranberries
and stir until just blended.
 
Spoon batter into eight muffin cups. Bake in preheated
375 degrees F oven 20-25 minutes or until a toothpick
inserted in the center comes out clean.

glucose levels under control before you try to get pregnant.

doctor right away. You can take steps to bring your blood

Your insulin needs may change when you're pregnant.
Your doctor may want you to take more insulin and
check your blood glucose levels more often.

ZESTY ASIAN TURKEY AND MANGO STIR-FRY
 
Put some zest and color into the spring season with this
healthy, easy to prepare dish, featuring the great taste of
mangoes and the wonderful benefits of turkey and broccoli.
Stir-frying enables you to create a delicious and nutritious
meal quickly with a lot of flavor and minimal fat.
 
Key to the recipe is the fish sauce, a condiment that helps
give it an Asian flavor. It's commonly used in Thai dishes.
Also called, "Nam Pla," fish sauce has a rich translucent
reddish-golden brown color. Good fish sauces are allowed to
ferment for 12 to 18 months. Anchovies are often used, but
some fish sauces are made from other types of fish or even squid.
 
The mango, which originated in Southeast Asia over
4,000 years ago, adds a rich measure of fiber, vitamins,
minerals and antioxidants. The enzymes in mangoes are
very good tenderizing agents.
 
Select the best ripe mangoes by both smelling and gently
squeezing. A ripe mango has robust fruity aroma emitting
from the stem end, and they are ready to eat when they
yield to a soft touch, much like a ripe peach.
 
Choose mangos that are plump and heavy for their size
with the right fragrance. The color may be green,
yellow, red and orange or any combination. After the
skin is removed, the golden pulp adds stunning color
and a somewhat sweet quality to the stir-fry. Although
texture can vary, it's similar to a ripe plum.
 
Canola oil, with its high smoke point, is the perfect
oil for preparing this recipe. You can experiment and
create the level of zest you like by sprinkling in
the preferred amount of red pepper flakes to complement
the cilantro, basil and mint.
 
So enjoy some great fruit taste and nutritional value
in a dish that features the time saving and health
benefits of quick frying.
 
ZESTY ASIAN TURKEY AND MANGO STIR-FRY
 
Yield: Makes 6 servings.
 
Ingredients
 
-   2 Tbsp. fish sauce
-   3 Tbsp. lime juice
-   1 tsp. cornstarch
-   1 tsp. brown sugar
-   2 Tbsp. canola oil, divided
-   1 lb. turkey fillets, cut into 1-inch pieces
-   3 cloves garlic, minced
-   1 tsp. minced ginger
-   1/4-1/2 tsp. crushed red pepper or to taste
-   4 cups small broccoli florets
-   1/4 cup low-sodium chicken broth, water may be substituted
-   2 mangoes, peeled and sliced
-   5 scallions, cut into 1-inch pieces, including green stems
-   2 Tbsp. chopped fresh cilantro
-   1/4 cup chopped fresh basil
-   1/4 cup chopped fresh mint
-   6 lime wedges
 
Directions
 
Combine fish sauce, lime juice, cornstarch
and brown sugar in a mixing bowl. Set aside.
 
Heat 1 tablespoon oil in large skillet or wok over high heat.
Add turkey, stirring frequently until cooked through, about
5 to 7 minutes. Transfer to plate and set aside.
 
Add remaining oil, garlic, ginger and red pepper to skillet
or wok. Cook, stirring constantly, for 30 seconds or less.
 
Add broccoli and broth. Cook, stirring constantly, until
broccoli begins to soften, about 2 minutes. Add mangoes
and scallions. Cook, stirring constantly, for about 1 minute.
 
Add the fish sauce mixture and turkey. Cook, stirring
constantly, until the sauce thickens and the turkey
is heated through, about 1 to 2 minutes. Stir in
cilantro, basil and mint. Serve with lime wedges.

Some research suggests that weighing yourself regularly can help
you reach and maintain a healthy weight, both as a reminder to
continue behavior changes you make and as a way of catching and
reversing small weight gains before they become big ones.
 
The frequency of weight checks that is most helpful is still
an unanswered question, although a recent review of six studies
concluded that somewhere between daily and weekly weight
checks can support weight loss and decrease weight regain.
 
Clearly it does no good to weigh yourself more than once a
day; all you see are shifts in water balance, and checking
weight this often is a mark of someone possibly becoming
un-healthfully obsessed with their weight.
 
Experienced registered dietitians (RDs) say that many factors
go into the effects that weight checks have for any given
individual. If you have had disordered eating patterns or
much emotional "baggage" from a long history of going on and
off diets, and for people in their mid-20s and younger,
frequent weight checks done on their own may do more harm
than good in some cases.
 
One important key is how you use what you learn when checking
your weight: the goal is not to find fuel for self-criticism,
but feedback that can lead to better eating and physical
activity habits. Consider carefully how weight checks have
worked for you in the past, and perhaps discuss the question
with your healthcare provider or a registered dietitian,
to decide what will work best for you at this particular
time in your life.
