ALPHABET TURKEY SOUP

Ingredients
 
-  4 cups turkey broth or reduced-sodium chicken bouillon
-  1 can (16 ounces) tomatoes
-  1 cup chopped onion
-  1 cup peeled and thinly sliced carrots
-  2 teaspoons Italian seasoning
-  1/2 teaspoon salt
-  1/4 teaspoon pepper
-  4 cups thinly sliced cabbage
-  2 cups cooked turkey, cut into 1/2-inch cubes
-  1/2 cup alphabet pasta
 
Directions
 
In 5-quart saucepan, over medium-high heat, combine broth,
tomatoes, onion, carrots, Italian seasoning, salt and
pepper; bring to a boil. Reduce to low and simmer
10 to 15 minutes or until carrots are tender.
 
Add cabbage, turkey and pasta; return to boil.
Immediately reduce heat and simmer 5 to 10 minutes
or until cabbage and pasta are tender.

Ingredients
 
-  1 beef shank bone with 1lb. meat
-  2-1/2 quarts water
-  2 bay leaves
-  1/3 cup chopped celery leaves
-  1/4 cup chopped fresh parsley
-  1 tsp Morton Lite Salt ® Mixture
-  1/2 tsp freshly ground pepper
-  1 envelope (1oz.) onion soup mix
-  1 can (15oz.) stewed tomatoes with juice
-  1 package (10oz.) frozen mixed vegetables
-  1 cup peeled, diced potatoes
-  1 cup sliced celery
 
Directions
 
Remove any fat from the beef.
 
In a large, covered soup pot, simmer the beef bone
with meat in water with bay leaves, celery leaves,
parsley, Morton Lite Salt Mixture, pepper, and
onion soup mix until meat is tender, about 2-1/2 hours.
 
Remove the one, meat and bay leaves. Chill broth and
remove any fat. Cut meat into bite size pieves and
return to broth. Discard bone and bay leaves.
 
Add tomatoes, frozen vegetables, potatoes, and celery.
Cover and simmer for 25 minutes. Serve hot.

-  2 Tbsp. olive oil
-  1 carrot, cut in half-moons
-  1 rib celery, sliced
-  1 small onion, chopped in bite-size pieces
-  1 small leek, chopped in bite-size pieces
-  3 outer leaves Savoy cabbage, rolled and cut in 1/2" strips
-  4 cups fat-free, reduced sodium chicken broth
-  1 tsp. dried thyme
-  1 garlic clove, chopped
-  2 cups squash (e.g. butternut), peeled and diced
-  1 can (15 oz.) chickpeas or white beans, rinsed and drained
-  1 cup cooked chicken cut in bite-size pieces (optional)
 
Directions
 
Heat oil in medium Dutch oven or large, deep saucepan.
Saute carrot, celery, onion, leek, and cabbage until
leaves are bright green and other vegetables start to
soften, about 3 minutes. Add broth. Cover and simmer
for 15 minutes.
 
Add thyme, garlic, squash and beans. Cover and simmer
15 minutes. Stir in chicken, if using. Ladle soup
into deep bowls and serve accompanied by toasted
slices of whole-grain French bread or other rustic
bread. (This soup reheats well. It keeps up to
5 days, covered, in refrigerator.)

-  1 package (9 ounces) fresh low-fat tomato and cheese tortellini

Directions
 
Spray bottom of large saucepan with cooking spray; heat

friends how to give you an injection of glucagon, a
hormone that raises blood glucose levels right away.
 
High Blood Glucose
 
High blood glucose, also called hyperglycemia, can
happen when you don't have enough insulin or when your
body isn't able to use insulin correctly. High blood
glucose can result from
 
- a mismatch between food and medication
- eating more food than usual
- being less active than usual
- illness
- stress
 
In addition, if your blood glucose level is already
high, physical activity can make it go even higher.
Symptoms of high blood glucose include
 
- frequent urination
- thirst
- weight loss
 
Talk with your health care provider about what to do
when your blood glucose is too high-whether it happens
once in a while or at the same time every day for several
days in a row. Your provider might suggest a change in
your insulin, meal plan, or physical activity routine.

NEW TWIST TO YOUR NEXT CHICKEN MEAL
 
Add a new twist to your next chicken meal. This simple
stuffing in a chicken breast not only tastes great, but
helps maintain a nice moist quality to the meat as well.
 
Combining a bit of yogurt with the cheddar cheese gives the
stuffing a smooth, creamy texture. The yogurt also ensures that
the poultry remains moist – solving the common problem of a
"too dry" chicken breast. A little lemon juice and dash of hot
sauce provide some zest. Greek yogurt is very thick because the
whey has been drained away. You can make your own by spooning
plain yogurt into a cheese cloth lined colander and letting
the yogurt drain for several hours in the refrigerator.
 
For a tasty, satisfying meal, add some colorful vegetable
side dishes; for example, try pairing the chicken with
steamed green beans with toasted almonds.
 
To round out the meal, roast sweet potatoes with a touch
of olive oil for a naturally sweet side. With this meal,
at least 2/3 of your plate contains plant-based foods and
1/3 or less contains animal-based foods. So for health,
flavor and something a little unique put stuffed chicken
breasts on your menu.
 
Stuffed Chicken Breast
 
Makes 4 servings.
 
Ingredients
 
- Canola oil cooking spray
- 1 lb. boneless, skinless chicken breast, four thick pieces
- 3/4 cup low-fat shredded cheddar cheese
- 2 Tbsp. green onions, finely chopped, including the stems
- 1 medium red bell pepper, 1/2 diced, 1/2 sliced
- 1 Tbsp. plain Greek yogurt (may substitute canola mayo)
- 2 tsp. fresh lemon juice
- 1/2 tsp. hot sauce (optional)
- 1 Tbsp. olive oil
- 1/4 cup chopped fresh parsley or 1 Tbsp. dried parsley
- Salt and freshly ground pepper to taste
 
Directions
 
Preheat oven to 350 degrees.
Spray 7x11-inch pan with cooking spray.
 
Carefully cut about a 1 inch wide slit into the thick end of
each chicken breast. Insert knife to create a fairly deep pocket.
 
Combine cheese, green onions, red pepper, yogurt, lemon
juice and hot sauce in mixing bowl. Divide mixture into
4 portions and use a spoon to stuff breasts. Secure openings
with wooden toothpicks inserted at an angle so meat lays
flat. Place in prepared pan.
 
Brush olive oil over top of chicken and sprinkle
with parsley, then pepper and salt, if using.
 
Bake for 30-35 minutes or until chicken is cooked through. Let
stand about 5 minutes. Garnish with red pepper slices and serve.

TRIGLYCERIDE: A type of blood fat. The body needs insulin to
remove this type of fat from the blood. When diabetes is under
control and a person's weight is what it should be, the level
of triglycerides in the blood is usually about what it should be.
 
KETOSIS: A condition of having ketone bodies build up in body
tissues and fluids. The signs of ketosis are nausea, vomiting,
and stomach pain. Ketosis can lead to ketoacidosis.
 
VITREOUS HUMOR: The clear jelly (gel) that
fills the center of the eye.
 
ADRENAL GLANDS: Two organs that sit on top of the kidneys
and make and release hormones such as adrenalin (epinephrine).
This and other hormones, including insulin, control the
body's use of glucose (sugar).
 
DESENSITIZATION: A method to reduce or stop a response such
as an allergic reaction to something. For instance, if a
person with diabetes has a bad reaction to taking a full
dose of beef insulin, the doctor gives the person a very
small amount of the insulin at first. Over a period of time,
larger doses are given until the person is taking the full
dose. This is one way to help the body get used to the full
dose and to avoid having the allergic reaction.

What can I do when I feel like eating
even though I'm not hungry?
 
ANSWER:
 
Great job at tuning in to hunger signals! People can feel like
eating – despite lack of hunger – for a variety of reasons.
The next step, when you realize that you are not hungry,
but feel an urge to eat anyway, is to tune in again.
 
Can you figure out what's behind the urge? Maybe you are
actually thirsty and simply need to drink more water. Or
is more sleep what you really need? You might be trying
to address feelings such as stress, anger, loneliness
or boredom with food.
 
Set aside time when you are not in the midst of one of these
urges to make a list of things other than food that might
meet the need. For example, you could take a crossword puzzle
break from challenging work, do deep breathing or phone a
good friend when feeling stressed.
 
Here's a little trick: behavioral therapists often note that
this desire to eat when not hungry tends to come in a wave.
If you aren't truly hungry, the urge will usually pass if you
can distract yourself with something else for a little while.
So when the urge comes to eat and you are not hungry, check
your pre-planned distraction ideas list and try one of the
possibilities there before you head for food.
