SPICY CRAB AND SCALLOP CHOWDER

Ingredients
 
-  1 medium onion, chopped
-  1 stalk celery, chopped
-  1 tablespoon margarine
-  1-1/2 cups clam juice
-  1 can (14 ounces) reduced-sodium stewed tomatoes, undrained
-  2 teaspoons pickling spice
-  1 can (4 ounces) lump crabmeat, drained
-  1/2 pound bay scallops
-  1/4 cup 2% reduced-fat milk
-  Salt and pepper, to taste
 
Directions
 
Saute onion and celery in margarine in large saucepan until
softened. Add clam juice and stewed tomatoes and liquid.
 
Place pickling spice in a mesh tea ball or tie in cheesecloth;
add to mixture. Heat to boiling; simmer 2 minutes.
 
Stir in crabmeat and scallops; simmer until scallops are
tender and opaque, about 3 minutes. Discard pickling spice.
Stir in milk; heat until hot (do not boil). Season to
taste with salt and pepper.

-  2 cups sliced carrots
-  1/4 cup sliced green onions and tops
-  2 cloves garlic, minced

-  1-1/2 cups water
-  1 package (9 ounces) fresh low-fat tomato and cheese torellini
-  3 cups torn spinach leaves

Directions
 
Spray bottom of large saucepan with cooking spray; heat over
medium heat until hot. Saute carrots, green onions, garlic,

Add chicken broth and water to saucepan; heat to boiling.
Reduce heat and simmer, covered, 10 minutes.
 
Heat broth mixture to boiling; stir in torellini and spinach.

-  4 shallots, thinly sliced
-  2 teaspoons margarine, divided
-  2 large potatoes, cut into 1/4-inch cubes
-  3 cups reduced-sodium vegetable broth
-  4 ounces shiitake mushroom caps
-  2 cups cubed portobello mushrooms
-  1/4 cup (1 ounce) shredded Gruyere, or Swiss cheese
-  2 tablespoons Marsala wine
-  Salt and white pepper, to taste
 
Directions
 
Saute shallots in 1 teaspoon margarine in large saucepan
until tender. Add potatoes and broth. Heat to boiling;
reduce heat and simmer, covered, until potatoes are tender,
about 15 minutes. Process mixture in blender or food
processor until smooth; return to saucepan.
 
Saute mushrooms in remaining 1 teaspoon margarine in large
skillet until wilted and golden brown, about 8 minutes;
stir into potato mixture. Heat to boiling; remove from
heat and add cheese and wine, stirring until cheese is
melted. Season to taste with salt and pepper.

-  3 cups water
-  2 cups green beans, diagonally cut into 1/2-inch pieces
-  4 medium carrots, sliced
-  2 medium onions, coarsely chopped
-  8 ounces thin spaghetti, uncooked,
   broken into 2-to 3-inch pieces
-  2 medium plum tomatoes, coarsely chopped

Directions
 
Mix ground turkey, egg whites, bread crumbs, 2 cloves of
garlic, and 2 tablespoons of Italian seasoning until well
blended; shape mixture into 32 meatballs. Spray large
saucepan with cooking spray; heat over medium heat until
hot. Cook meatballs until browned on all sides, 5 to 7 minutes.
 
Add chicken broth, water, green beans, carrots, onions,
remaining 2 cloves garlic, and remaining 1 tablespoon
Italian seasoning to saucepan; heat to boiling. Reduce
heat and simmer, covered until vegetables are almost
tender, about 8 minutes.
 
Heat soup to boiling; add pasta and tomatoes. Reduce heat
and simmer, uncovered, until pasta is al dente, about

TRAVEL TIPS FOR DIABETICS
 
As any travel agent or stranded tourist will tell you, planning
ahead is the key to a successful trip. And this is particularly
true for people with diabetes - a little forethought will take
you a long way and help keep you healthy once you are there.
Whether you want to hike in the Canadian Rockies or lie in the
Florida sunshine, Travel Tips for people with diabetes will
help you to make your trip safer and more successful.
 
PLANNING AHEAD
 
Diabetes shouldn't stop you from doing the things you want to
do. If you want to travel, and you have diabetes, you must
plan ahead carefully. There are many disaster stories such as
lost luggage or encountering a hurricane. Traveling can be
stressful sometimes - and stress can raise blood glucose
levels. Although you can't avoid the odd surprise, preparation
before you leave can help you avoid undue stress.
 
Consider telling your travel agent that you have diabetes
and explain some of the particular needs that traveling
with diabetes entails. That way, a suitable itinerary can
be planned to meet your needs. A missed connection or
illness can ruin the best-laid holiday plans.
 
VISIT YOUR DOCTOR OR DIABETES EDUCATOR
 
It is a good idea to visit your doctor for a checkup several
weeks before you leave. Show your itinerary to your health
care team and work out plans for your meals and medication,
especially if you are traveling through different time zones.
Be sure to get any required vaccinations at least four weeks
before you travel so you have time to deal with any possible
side effects.
 
Ask for a list of your medications (including the generic
names and their dosages) from your pharmacist-- particularly
pills for diabetes, anti-diabetic pills, and insulin. If
you take insulin, record the types of insulin and whether the
insulin is short, intermediate or long-acting. Photocopy the
list and carry one copy with you at all times. Some countries
require you to have written documents from your doctor,
stating that you are allowed to carry medicines or supplies.
Syringes and needles in particular can present a problem
when entering some countries.
 
Ask your doctor or diabetes educator what to do if you get
sick on your holiday. Generally, if you experience motion
sickness while traveling, take carbohydrate in the form of
fluids. If you are not sure how to convert carbohydrate to
fluids, ask your diabetes educator. Here are some basic
illness management tips: Test your blood glucose levels every
two to four hours around the clock. If you have type 1 diabetes,
test your urine for ketones every four hours around the clock.
 
If your blood glucose is high and you have ketones in your
urine, you will need to take more short-acting insulin. Never
stop your insulin or diabetes pills when you are ill, even if
you are unable to eat. If your blood glucose levels are low
you may need to reduce the dose. Drink lots of fluids as
illness can cause dehydration. If you are able to eat, drink
one cup of sugar-free fluid per hour (e.g. water or diet pop).
If you are unable to eat, drink sugar containing (e.g. regular
pop or tea with sugar) as well as sugar-free fluids. Try to
drink one cup of fluid per hour. Rest. Seek medical attention
if you vomit more than twice.
 
If you use insulin to manage your diabetes, you should also ask
your doctor or diabetes educator about glucagon. Glucagon is
an injection that is used to treat severe low blood glucose,
a condition that can cause seizures or a loss of consciousness.
If you are traveling to a remote spot that does not have
ambulance service, it is important that your travel companion
learn how to give glucagon. See your doctor or diabetes
educator if you are unfamiliar with its use.
 
IDENTIFICATION
 
Take identification with you that explains your condition
in case you are unable to give instructions yourself.
Consider getting a MedicAlert bracelet or necklace
that states you have diabetes.
 
TRAVEL INSURANCE
 
Some insurance plans do not cover pre-existing
medical conditions, which includes diabetes.
 
PACKING
 
Divide your medications and diabetes supplies and pack them
in more than one place, in case you lose one of your bags.
Most importantly, make sure that you have a portion of
medications and supplies in your carry-on luggage. Take
extra supplies and medication in case of loss, theft or
accidental destruction. Also consider some of the other
supplies you may need including treatment for hypoglycemia,
food supplies, drinking water, walking shoes, sunblock
and medication for nausea and diarrhea.

QUICK AND EASY CHICKEN CACCIATORE
 
Creating classic tastes doesn't have to be time consuming
or difficult, as proven by this week's recipe. It combines
the goodness of chicken with the timeless taste of tomatoes,
all set off with traditional Italian spices.
 
Chickens, which were domesticated about 8000 years ago, have
become a mainstay in our diets. They are relatively low fat,
delicious and nutritious—providing significant amounts of
several B vitamins, iron, zinc and selenium. According to
the United States Department of Agriculture (USDA), Americans
purchased about 86 lbs. of chicken per person in 2007 .
 
Extremely versatile as a food, chicken pairs terrifically with
tomatoes. Tomatoes, which are technically a fruit, provide a
somewhat sweet taste with an underlying layer of acidity. Their
rich red color makes the perfect sauce for chicken. Add green
bell pepper and mushrooms, and the taste is pure Italian.
 
Using cooking spray is a healthy way to sear and cook
the meat. Finishing the cooking process by simmering
the bird in the sauce enables the meat to fully absorb
the flavor of the other ingredients.
 
The chicken broth ensures that the poultry stays savory moist.
You can serve the pieces whole or some home chefs prefer
to shred the meat. Either way, serve this wonderful dish
over a bed of whole-wheat spaghetti or linguini. You will
probably want to make some extra of this fast, nourishing
and satisfying recipe because it makes great leftovers.
 
QUICK AND EASY CHICKEN CACCIATORE
 
Yield: Makes 4 servings.
 
Ingredients
 
-  Nonstick cooking spray
-  1/2 lb. chicken breasts, skinless and boneless
-  1/2 lb. chicken thighs, skinless and boned
-  1 green bell pepper, cut into julienne strips
-  1/3 cup chopped onion
-  1/2 cup sliced mushrooms
-  1 (14 1/2 oz) can no added salt stewed tomatoes
-  1/4 cup water (may substitute low-sodium
   chicken broth or dry red cooking wine)
-  2 tsp. dried Italian seasoning
-  1/8 tsp. fresh ground black pepper
 
Directions
 
Coat large skillet with cooking spray. Preheat skillet over
medium-high heat. Add chicken and cook until lightly browned,
about 6 minutes. Turn frequently to ensure consistent browning.
 
Add in pepper, onion and mushrooms and saute
an additional 2 minutes, stirring frequently.
 
Stir in tomatoes, water (or broth or wine), Italian
seasoning and black pepper. Bring to boil. Reduce heat,
cover, simmer, gently stirring occasionally, until
chicken is tender and no longer pink, about 15 minutes.
 
Remove chicken from skillet, set aside and cover
to keep moist and warm. Continue to simmer sauce,
uncovered and stirring occasionally, for about
5 minutes or until desired consistency.
 
Place chicken in a serving dish.
Pour sauce over the top and serve.

A1C:
a test that measures a person's average blood glucose
level over the past 2 to 3 months. Hemoglobin  is the part
of a red blood cell that carries oxygen to the cells and
sometimes joins with the glucose in the bloodstream. Also
called hemoglobin A1C or glycosylated hemoglobin, the test
shows the amount of glucose that sticks to the red blood cell,
which is proportional to the amount of glucose in the blood.
 
Cholesterol:
A type of fat produced by the liver and found in the
blood; it is also found in some foods. Cholesterol is
used by the body to make hormones and build cell walls.
 
Dawn Phenomenon:
The early-morning (4 a.m. to 8 a.m.)
rise in blood glucose level.
 
Islets:
Groups of cells located in the pancreas that make
hormones that help the body break down and use food.
For example, alpha cells make glucagon and beta cells
make insulin. Also called islets of Langerhans.

Can green tea really help people lose weight?
 
ANSWER:
 
Some studies suggest that two to four cups of green tea daily
could provide some extra help when you cut calorie consumption
and boost your activity to lose weight, but don't expect
it to produce a major loss. Natural compounds in green tea,
especially a polyphenol known as EGCG, may support weight loss.
 
Studies that do show an effect of green tea or isolated EGCG
show an average of about an extra one to three pounds of
weight loss over several months, especially among those
who are moderately obese.
 
Some vitamin supplements or products that claim to promote
weight loss list EGCG or green tea extract content but may
