CARAWAY ROASTED BEETS
 
Yield: Makes 4 servings.

Ingredients
 
-  4 beets (1-1/4 pounds total), greens and
   all but 1 inch of stems removed
-  2 teaspoons caraway seeds
 
Directions
 
Preheat the oven to 375 degrees F.
 
Wash the beets well and place them on a square of heavy-duty
aluminum foil. Sprinkle them with the caraway seeds. Fold and
pinch the foil to seal the beets in the packet. Put the foil
pouch in the oven and bake for 50 minutes.
 
Remove the packet from the oven, place in the sink, and open.
(Be careful; the juice will stain.) Peel the beet skin with a
small paring knife and cut the beets in quarters. Dip the beets
in the juices from the bottom of the foil packet and sprinkle
some caraway seeds from the packet over them. Serve hot.

Ingredients
 
-  1-1/2 pound small turnips, peeled and quartered
-  1 ripe bartlett pear, about 6 ounces, peeled, cored, chopped
-  4 cloves garlic, roasted and peeled
-  1 tablespoon margarine
-  2 tablespoons skim milk
-  1/4 teaspoon salt
-  Freshly ground pepper to taste
 
Directions
 
Steam turnips over boiling water
until fork tender, about 15 minutes.
 
Drain turnips and place in a food processor
or blender along with pear, garlic, and margarine.
 
Process until smooth, adding skim milk as needed.
 
Season with salt and pepper. Serve immediately.

Ingredients
 
-  Seasoned Pork:
-  2 pounds pork shoulder roast
   or 1-1/2 pounds boneless, cut into 3-inch chunks
-  1 small white onion, quartered
-  2 cloves garlic, peeled and coarsely chopped
-  1 teaspoon salt
 
Roasted Tomato and Chipotle Sauce Ingredients:
 
-  2 pounds plum tomatoes
-  1-1/2 teaspoons canola oil,
   plus additonal oil for roasting tomatoes
-  1 small onion, thinly sliced
-  2 cloves garlic, minced
-  6 ounces Mexican chorizo, cooked and drained
-  1/2 teaspoon ground cloves
-  1/2 teaspoon cinnamon
-  2 teaspoons dried thyme
-  1-1/2 ounces chipotle chiles in adobo sauce, pureed
-  salt, to taste
-  32 small fried corn tortillas
-  1/2 cup crema (Mexican cream)
-  1 ripe avocado, cut up
 
Directions
 
Place pork, onion and garlic in 2-quart saucepot; cover
completely with water and bring to a rolling boil.
Reduce heat and simmer for 1-1/2 hours or until meat
is tender. Drain meat (discard garlic and onion).
 
When cool enough to handle, remove bones, shred pork
and store in refrigerator until ready to use. Cut
tomatoes in half and discard stems and seeds. Place
in shallow pan and brush with oil. Roast in 375 degrees F
oven 20 to 30 minutes or until tomato skins slip off
easily. Discard skins and chop tomatoes.
 
Heat oil in medium skillet. Cook and stir onion and
garlic over medium-high heat 3 minutes or until tender.
Stir in tomatoes, cover, reduce heat and simmer 5 minutes
or until tomatoes are very saucy. Add remaining sauce
ingredients and shredded pork and simmer 2 to 3 more
minutes or until mixture is well blended and heated through.
 
Serve hot meat mixture on tostaditas with crema and avocado.

-  2 beef top loin steaks or four beef
   tenderloin steaks, cut 1 inch thick
-  8 cups torn salad greens
-  3/4 cup Italian dressing
 
Roasted Vegetables:
 
-  16 small mushrooms
-  1 large red, yellow or green bell pepper,
   cut into 1-inch wide strips
-  1 medium Japanese eggplant, sliced (1-inch)
-  1 medium onion, cut into 8 wedges
-  1 medium zucchini, sliced (1-inch)
-  2 tablespoons balsamic vinegar
-  2 large cloves garlic, minced
-  1 teaspoon dried rosemary leaves
 
Directions
 
Heat oven to 425F. Spray 15 x 10-inch baking pan with cooking
spray. Place vegetables in pan; spray generously with cooking
spray. Drizzle with vinegar; sprinkle with garlic, rosemary
and salt and pepper. Stir to coat. Roast in 425F oven 30 to 35
minutes or until tender, stirring once. Cool slightly.
 
Heat large nonstick skillet over medium heat until hot.
Place steaks in skillet; cook top loin steaks 12 to 15 minutes
(tenderloin steaks 10 to 13 minutes) for medium rare (145F)
to medium (160F) doneness, turning occasionally.
Remove; let stand 10 minutes.
 
Carve steaks; season with salt. Arrange beef and
vegetables on greens. Serve with dressing.

INFORMATION REGARDING INSULIN STORAGE AND
SWITCHING BETWEEN PRODUCTS IN AN EMERGENCY
 
Insulin from various manufacturers is often made available
to patients in an emergency and may be different from a
patient's usual insulin. After a disaster, patients in the
affected area may not have access to refrigeration.
 
According to the product labels from all three U.S. insulin
manufacturers, it is recommended that insulin be stored in a
refrigerator at approximately 36 to 46 degrees F. Unopened and
stored in this manner, these products maintain potency until
the expiration date on the package. However, all of the
available insulin products may be left unrefrigerated (between
59 and 86 degrees F) for up to 28 days and still maintain potency.
 
As a general rule, insulin loses its potency according to the
temperature it is exposed to and length of that exposure. Under
emergency conditions, you might still need to use insulin that
has been stored above 86 degrees F. Such extreme temperatures
may cause insulin to lose potency, which could result in loss
of blood glucose control over time.
 
In any case, you should try to keep insulin as cool as possible.
Try to keep insulin away from direct heat and out of direct
sunlight, but if you are using ice, also avoid freezing the insulin.
 
When properly stored insulin again becomes available, the
insulin vials that have been exposed to these extreme
conditions should be discarded and replaced. If patients
or healthcare providers have specific questions about the
suitability of their insulin, they may call the respective
manufacturer at the following numbers:

Insulin Switching
 
Switching insulin should always be done in consultation with
a physician and requires close medical supervision. If this
is not possible under emergency conditions, the following
recommendations may be considered. Make sure to closely monitor
your blood glucose and seek medical attention as soon as possible.
 
Short-acting and rapid-acting insulins
 
One brand of regular insulin (e.g. Humulin R, Novolin R)
may be substituted for another brand of regular insulin
and for rapid-acting insulins (e.g., Humalog, NovoLog),
and vice versa, on a unit-per-unit basis.
 
Intermediate and long-acting insulins
 
One intermediate-acting insulin product (e.g., Humulin N,
Novolin N, Lente insulin) may be substituted for another
intermediate-acting insulin product on a unit-per-unit basis.
Likewise, these insulins may also be substituted for long-acting
insulins (such as Lantus and Ultralente) on a unit-per-unit
basis, or vice versa. IMPORTANTLY, half of the NPH (or Lente)
insulin dose should be given in the morning and
half given in the evening.
 
Insulin mixes
 
Patients using pre-mixed insulin products (e.g.,
Humulin 70/30, Humalog Mix75/25, Novolin 70/30,
NovoLog Mix 70/30) have two options to consider:
 
One insulin mix product may be substituted
for another on a unit-per-unit basis.
 
If no other insulin mix is available, patients should first
substitute an intermediate- or long-acting insulin on a
unit-per-unit basis relative to the intermediate-acting component
of the mix (e.g., in the examples above, approximately 3/4 of
the total unit dose of the mix), always making sure that the
total dose of NPH (or Lente) insulin is split between morning
and evening doses.
 
If regular or rapid-acting insulins are also available, they
may be used before major meals along with the intermediate-
or long-acting insulin (dosed as above) in doses equivalent
to approximately 1/4 of the total dose of pre-mixed insulin
usually taken before that meal.
 
Insulin pumps
 
Patients using insulin pumps who must switch to injected insulin
may substitute an intermediate or long-acting insulin for the
24-hour total basal dose of infused insulin on a unit-per-unit
basis, always making sure that the total dose of NPH (or Lente)
insulin is split between morning and evening doses.
 
If regular or rapid acting insulin is also available, patients
should administer mealtime insulin according to their previous
system for calculating their bolus insulin doses.

A WONDERFUL CASSEROLE TO WELCOME AUTUMN
 
The summer is over and new routines can mean hectic schedules
with little time to create great tasting healthy meals. This
wonderful casserole, featuring eggplant, can help. The term
casserole comes from the French for saucepan, meaning you cook
it in a single container allowing all the flavors to mingle.
 
Eggplant is popular in international cuisines like Indian,
Italian and French, but it's underused in the United States.
Incorporate these purplish garden gems into your home meals more
often, starting with smart buying. Simply avoid huge eggplant.
Instead choose firm small to medium fruit with blemish-free skin.
 
Coating the eggplant slices with flour allows them to remain
a pleasing firm texture. Layering the eggplant and vegetables
with creamy cheeses creates a satisfying casserole loaded
with Mediterranean flavor.
 
To complete your meal, add something fresh, like a tossed green
salad with lettuce and sliced cucumbers topped with shredded
carrots. Then sprinkle on some extra virgin olive oil and
vinegar or fresh lemon juice and dinner is served.
 
Cheesy Eggplant Casserole
 
Makes 6 servings.
 
Ingredients
 
-  1/4 tsp. salt
-  2 small to medium eggplants, peeled
   and sliced, about 1/2-inch thickness
-  1 Tbsp. olive oil
-  1/4 cup green onions, chopped
-  1 medium onion, coarsely chopped
-  1 bell pepper (red or green) diced
-  1/2 cup mushrooms, sliced
-  1 clove garlic, minced
-  1 tsp. dried Italian seasoning
-  2 cups no-salt added tomato puree
-  1 (14-oz.) can no-salt added diced tomatoes
-  1/4 cup all-purpose flour
-  Olive oil cooking spray
-  2 cups low-fat cottage cheese
-  1-1/4 cups shredded, low-fat mozzarella cheese
 
Directions
 
Preheat oven to 350 degrees.
Sprinkle salt over eggplant and set aside.
 
Heat oil over medium-high heat in a large skillet. Saute onions,
pepper, mushrooms, and garlic until tender, about 3-4 minutes.
Add seasoning, tomato puree and diced tomatoes and bring to a
boil. Reduce heat and simmer about 22 minutes.
 
Coat eggplant with flour, front and back. Coat skillet with
cooking spray and heat over medium heat. Add eggplant slices in
batches and cook, covered, until browned, turning once - about
3-5 minutes per side. Transfer to plate.
 
In a 7 x 11-inch casserole dish, spread about 1 cup sauce. Add
a layer of eggplant. Top with 1 cup cottage cheese, more sauce
and 1/2 cup mozzarella. Repeat again, placing a layer of sauce
on top. Sprinkle with remaining mozzarella. Bake uncovered,
about 30 minutes. Let stand 5 minutes before serving.
 
Nutritional Information Per Serving:
258 calories; 9 g total fat; 4 g saturated fat;
24 g carbohydrate; 21 g protein;
7 g dietary fiber; 600 mg sodium;

BLOOD VESSELS
Tubes that carry blood to and from all parts of
the body. The three main types of blood vessels
are arteries, veins, and capillaries.
 
CEREBROVASCULAR DISEASE
Damage to blood vessels in the brain. Vessels can burst
and bleed or become clogged with fatty deposits. When
blood flow is interrupted, brain cells die or are
damaged, resulting in a stroke.
 
CORONARY HEART DISEASE
Heart disease caused by narrowing of the arteries
that supply blood to the heart. If the blood
supply is cut off the result is a heart attack.
 
PHOTOCOAGULATION
A treatment for diabetic retinopathy. A strong beam of
light (laser) is used to seal off bleeding blood vessels

ANSWER:
 
A1C is a measure of blood glucose (sugar) levels over the past
two to three months. The target for most people with diabetes is
less than 7 percent. For most people with diabetes, the target
blood pressure is less than 130/80 and the target LDL (bad)
cholesterol is less than 100. Keeping your blood glucose, blood
pressure, and cholesterol close to these target levels reduces
your risk for the long-term problems of diabetes. Ask your
