CINNAMON APPLE PORK TENDERLOIN

Ingredients
 
-  1 lb pork tenderloin
-  2 apples, peeled, cored, sliced
-  2 tbsp cornstarch
-  2 tbsp raisins
-  1 tsp ground cinnamon
 
Directions
 
Preheat the oven to 400 F. Place the pork tenderloin
in a roasting pan or casserole dish with a lid.
 
Combine the remaining ingredients in a bowl and stir.
Spoon the apple mixture around the pork tenderloin.
Cover and bake 40 minutes.
 
Remove the lid and spoon the apple mixture over the tenderloin.
Return to the oven and bake 15-20 minutes longer until tenderloin
is browned and cooked through.

Ingredients
 
-  1 orange
-  1 lemon
-  3 pounds Granny Smith apples, peeled, cored, quartered
-  3 pounds Royal Gala or Braeburn apples, peeled, cored, quartered
-  3 tablespoons stick butter or margarine, cut into small pieces
-  2 teaspoons ground cinnamon
-  1/4 teaspoon ground nutmeg
-  1/2 cup Equal Spoonful*
 
* May substitute 12 packets Equal sweetener
 
Directions
 
Grate peel of orange and lemon. Place in 3-quart glass or
non-corrosive casserole with cover. Squeeze juice from orange
and lemon; add to grated peel in casserole. Add apples, butter,
cinnamon and nutmeg. Toss to combine.
 
Cover with casserole lid. Bake in preheated 350F oven 1-1/2
hours. Remove from oven and let stand covered 30 minutes.
Carefully remove lid. Stir to break up apples. Stir in Equal.
 
Serve warm or refrigerate, covered, several hours before serving.

-  1/3 cup vegetable oil
-  1/2 cup unsweetened applesauce
-  1/2 cup unsweetened cocoa powder
-  1/2 cup sugar
-  1 cup all-purpose flour
-  1 tsp baking powder
-  1/2 tsp baking soda
-  2 large eggs
-  1 tsp vanilla extract
-  1/4 cup chopped nuts
 
Directions
 
Preheat oven to 375 F.
 
Combine oil, applesauce and cocoa. Add sugar
and stir until dissolved. Add eggs and vanilla.
Mix dry ingredients together and stir into the mixture.
 
Pour the batter into a greased and floured (or wax paper lined
& sprayed) 9 inch square pan. Sprinkle on nuts (optional).
 
Bake about 20 to 30 minutes or until top is set but
edges are not dried out. Toothpick will come out
clean. Cut into 16 or 24 squares.

Ingredients
 
-  2 pork tenderloins, 1 pound each
-  1/4 cup apple juice, OR vermouth
-  2/3 cup chunky applesauce
-  1/4 cup dry roasted peanuts, finely chopped
-  1/4 teaspoon fennel seed, finely crushed
-  1/4 teaspoon salt
 
Directions
 
Heat oven to 425 degrees F.
 
Using a sharp knife, form a "pocket" in each tenderloin
by cutting a lengthwise slit down center of each almost
to, but not through, bottom of each tenderloin.
Place tenderloins in shallow roasting pan.
 
In small bowl stir together apple juice, applesauce,
peanuts, fennel, salt and pepper.
 
Spoon mixture into pocket in each tenderloin.
Secure stuffed pockets with toothpicks.
 
Roast for 20 minutes until internal temperature on a thermometer
reads 160 degrees F and let stand 5 minutes before slicing to serve,

TAKING CARE OF YOUR DIABETES
WHEN YOU'RE AWAY FROM HOME
 
These tips can help you take care
of yourself when you're away from home:
 
Follow your meal plan as much as possible when you eat out.
Always carry a snack with you in case you have to wait to be served.
 
Limit your drinking of beer, wine, or other alcoholic beverages.
Ask your diabetes educator how much alcohol you can safely drink.
Eat something when you drink to prevent low blood glucose.
 
If you're taking a long trip by car, check your blood glucose
before driving. Stop and check your blood glucose every 2 hours.
Always carry snacks like fruit, crackers, juice, or soft drinks
in the car in case your blood glucose drops too low.
 
Bring food for meals and snacks with you
if you're traveling by plane.
 
Carry your diabetes medicines and your blood testing supplies
with you. Never put them in your checked baggage.
 
Ask your health care team how to adjust your medicines,
especially your insulin, if you're traveling across time zones.
 
Take comfortable, well-fitting shoes on vacation. You'll probably
be walking more than usual, so you should take good care of your feet.
 
When traveling by plane, bring food for meals and snacks.
 
If you're going to be away for a long time, ask your doctor for
a written prescription for your diabetes medicines and the name
of a doctor in the place you're going to visit.
 
Don't count on buying extra supplies when you're traveling,
especially if you're going to another country. Different
countries use different kinds of diabetes medicines.
 
IF YOU USE INSULIN
 
When you travel:
 
Take a special insulated bag to carry your insulin
to keep it from freezing or getting too hot
 
Bring extra supplies for taking insulin and testing
your blood glucose in case of loss or breakage
 
Ask your doctor for a letter saying that you have
diabetes and need to carry supplies for taking
insulin and testing blood glucose

DRESS UP CHICKEN
 
Dress up chicken with a recipe that combines U.S. grown
apples with curry, a traditional Indian/Asian spice mixture.
Curry powder is actually a blend and can include mixtures of
up to 20 different herbs and spices. Common curry powder
ingredients include cardamom, chiles, cinnamon, cloves,
coriander, cumin, fennel, fenugreek, mace, nutmeg, red
pepper, poppy seeds, saffron and turmeric.
 
Curry became popular in the U.S. during the 1960s and
1970s with a significant increase in the number of
Indian restaurants throughout the U.S., and it has
become a common seasoning for American fare.
 
Most commonly associated with Indian cuisine, Indian chefs
usually grind their mixtures daily, making them more intense
and pungent than the mixes sold in stores. In the U.S., curry
powder generally comes in standard and madras or hot versions.
Nonetheless, the store-bought type packs plenty of punch and
will keep for up to two months if stored in an airtight container.
 
The heat generated by the curry and cinnamon is tempered by the
golden delicious apples. Most of this delectable fruit comes
from Washington state and is readily available from September
through November with the cold storage product available the
remainder of the year. Good quality golden apples will be firm
and smooth and range in color from pale green to creamy yellow.
Less mature apples will be light green and somewhat more tart.
Some goldens will have a splash of pink or blush, which is the
result of sunny days and cool nights.
 
The more mature or golden the apples are, the better they
work for this recipe since their natural sweetness acts as
the perfect balance to the curry. Avoid goldens – or any
apple – that wrinkles when you rub your thumb across the skin.
This is an indication that they have been in cold storage for
too long or they have not been kept consistently cool. In
addition, avoid goldens with “russeting,” a bronze-colored,
rough scab-like like condition usually found close to the stem.
 
Apples have a rich history in myths and legends. They even have
a romantic side. In ancient Greece, tossing an apple to a girl
was a traditional proposal of marriage and catching it was
acceptance. The U.S. folk hero Johnny Appleseed, whose real
name was John Chapman, cultivated apple orchards across the land.
 
This traditional combination of sweet apples and hot curry
is a great way to create a new chicken dish that is sure
to be a popular addition to your menu.
 
SPICED CHICKEN WITH APPLES
 
Makes 4 servings
 
Ingredients
 
-  1 tsp. curry powder
-  2 cinnamon sticks
-  1 large golden delicious apple, cored and chopped
-  1 large yellow onion, finely chopped
-  1/2 to 1 Tbsp. lemon juice
-  1/2 cup fat-free, reduced-sodium chicken broth
-  1 cup apple juice or cider
-  1 pound chicken thighs, boneless and skinless
-  1 Tbsp. flour
-  Salt and freshly ground pepper to taste
 
Directions
 
In wide skillet over medium heat, stir curry until slightly
darker in color. Add cinnamon sticks, and cook about
3 to 4 minutes. Add apple, onion, lemon juice, chicken
broth and 1/2 cup of apple juice. Bring to a boil.
 
Add chicken thighs to pan, reduce heat, cover, and simmer until
meat is no longer pink, about 1 hour. Cut to test. Remove
chicken from pan, arrange on warm platter and keep warm.
 
Blend flour and remaining 1/2 cup apple juice. Gradually add to
sauce pan, stirring. Increase heat to high and cook, stirring
until sauce thickens. Season to taste with salt and pepper.
Pour over chicken. The sauce also tastes wonderful poured
over baked potato or brown or wild rice.
 
Nutritional Information Per Serving:
200 calories; 4.5 g total fat; 1 g saturated fat;
16 g carbohydrate; 23 g protein; 2 g dietary fiber; 160 mg sodium

DESENSITIZATION
A way to reduce or stop a response such as an allergic reaction
to something. For example, if someone has an allergic reaction
to something, the doctor gives the person a very small amount
of the substance at first to increase one's tolerance. Over a
period of time, larger doses are given until the person is
taking the full dose. This is one way to help the body get
used to the full dose and to prevent the allergic reaction
 
DIAGNOSIS
The determination of a disease from its signs and symptoms.
 
HEMODIALYSIS
The use of a machine to clean wastes from the blood after the
kidneys have failed. The blood travels through tubes to a
dialyzer, a machine that removes wastes and extra fluid.
The cleaned blood then goes back into the body.
 
PERITONEAL DIALYSIS
Cleaning the blood by using the lining of the abdomen as a
filter. A cleansing solution called dialysate is infused from
a bag into the abdomen. Fluids and wastes flow through the
lining of the belly and remain "trapped" in the dialysate.
The dialysate is then drained from the belly, removing the
extra fluids and wastes from the body.

The A1C test is based on the attachment of glucose to
