MEXICAN SPAGHETTI PIE
 
Yield: Makes 4 servings

INGREDIENTS
 
-  8 ounces uncooked Dreamfields Spaghetti
-  1 tablespoon canola oil
-  1 egg, beaten
-  8 ounces 90% lean or higher ground beef
   or uncooked ground turkey breast
-  1/2 cup chopped green sweet pepper
-  1 cup prepared salsa
-  1 cup frozen whole kernel corn
-  Nonstick cooking spray
-  1/2 cup shredded reduced-fat cheddar cheese
   or Mexican blend cheeses
-  Cherry tomatoes, cut up (optional)
-  Fresh cilantro (optional)
 
DIRECTIONS
 
Preheat oven to 350F.
 
Cook spaghetti according to package directions.
Drain. Return spaghetti to warm saucepan.
Add oil and toss to coat. Stir in egg; set aside.
 
Meanwhile, in a medium skillet cook ground beef and
green pepper until meat is brown and pepper is tender,
stirring to break up meat as it cooks. Drain off fat.
Stir in salsa and corn; heat through.
 
Coat a 9-inch deep dish pie plate with nonstick cooking
spray. Press spaghetti mixture onto bottom and up sides
of prepared pie plate. Top with meat mixture.
 
Bake in a 350F oven for 25 to 30 minutes or until
heated through. Top with cheese. Let stand 5 to 10 minutes
before serving. Cut into wedges. Serve with cherry
tomatoes and cilantro, if desired.

INGREDIENTS
 
-  10 Dreamfields lasagna noodles, uncooked
-  8 ounces lean hamburger
-  8 ounces mild Italian sausage
-  1/2 cup onion, chopped
-  2 cloves garlic, minced
-  2 cups sliced mushrooms
-  1 jar (26 ounces) marinara sauce
-  1 can (14.5 ounces) diced tomatoes with basil, garlic and oregano
-  1/4 cup water
-  15 ounces part-skim ricotta
-  1 egg
-  1/2 teaspoon salt
-  1/2 teaspoon ground black pepper
-  1/2 cup grated Parmesan cheese
-  1-1/2 cups shredded part-skim Mozzarella cheese
 
DIRECTIONS
 
In a large skillet over medium-high heat, brown hamburger
and Italian sausage until no longer pink, about 7 minutes.
 
Add onion, garlic and mushrooms and cook for 3 minutes.
Add marinara sauce and water and simmer for 10 minutes.
 
In a medium bowl, mix together ricotta cheese, egg, salt and pepper.
 
In a deep (12x10x2 1/2-inch), lasagna pan spread 2-1/2 cups of
meat sauce. Layer 4 lasagna noodles and place the 5th noodle
cross-wise. Spread half of the cheese mixture over the noodles.
Sprinkle the Parmesan cheese and 1/2 cup of the Mozzarella cheese.
 
Spread 2-1/2 cups of meat sauce, 5 more lasagna noodles, remaining
ricotta cheese, 1/4 cup of Parmesan cheese. Layer the rest of the
meat sauce and the rest of the Mozzarella cheese.
 
Cover with aluminum foil and bake at 375-degrees F for
40 minutes. Uncover and bake for an additional 10 minutes.

-  12 ounces coarsely chopped cooked salmon (see note)
-  1 cup chopped seeded cucumber
-  1/4 cup chopped red onion
-  3 to 4 tablespoons snipped fresh mint
-  3 tablespoons fresh lemon juice
-  1 tablespoon olive oil
-  2 teaspoons honey
-  1 teaspoon lemon zest (optional)
-  1/4 teaspoon salt
-  1/8 teaspoon coarse grind black pepper
-  1 cup halved cherry tomatoes
-  Leaf lettuce (optional)
-  Lemon wedges (optional)
 
DIRECTIONS
 
Cook pasta according to package directions; drain.
Rinse with cold water; drain again.
 
In a medium bowl combine drained pasta,
salmon, cucumber, red onion and mint.
 
For vinaigrette, in a small bowl combine lemon juice,
olive oil, honey, zest, if desired, salt, and pepper.
Whisk together. Pour over pasta mixture. Toss gently
to coat. Add tomatoes. Toss gently.
 
Serve immediately or cover and chill up to 24 hours.
Serve on top lettuce with fresh lemon, if desired.

Notes: Using fresh ingredients, like herbs, increases
the intensity of the flavor. This basic tomato sauce may
be made ahead of time and stored in the refrigerator for
up to 48 hours or freezer up to 2 months.
 
INGREDIENTS
 
-  16 ounces Dreamfields Spaghetti
-  1 tablespoon olive oil
-  2 cloves garlic, minced
-  1 tablespoon red onion, chopped
-  1/4 teaspoon hot pepper flakes
-  1/4 cup white wine or chicken broth
-  1 can (28-ounces) whole peeled tomatoes
-  1/2 cup sliced black olives
-  2 tablespoons capers, drained
-  1 tablespoon fresh basil, chopped (or 1 teaspoon dried)
-  1/4 cup Parmesan cheese
 
DIRECTIONS
 
Heat oil in a large skillet over medium heat. Cook garlic,
onion and pepper flakes 5 minutes or until sizzling hot.
Add wine or chicken broth and cook until liquid has
evaporated, about 3 minutes.
 
Drain tomatoes and break up. Add into skillet along with
olives and cook 5 minutes. Add oregano and basil, cook
on medium for 10 minutes, stirring frequently.
 
Prepare pasta according to package directions; drain well.
Toss pasta with sauce and Parmesan cheese. Serve immediately.

LIFESTYLE CHOICES, DIABETES AND YOUR HEART
 
Lifestyle choices, including eating a healthy diet and regular
physical activity, are important for maintaining a healthy
heart. For people with diabetes, these lifestyle choices
are even more important to remain healthy and reduce the
risk of heart disease, a major complication of diabetes.
 
THE LINK BETWEEN DIABETES AND HEART DISEASE
 
It has long been known that high cholesterol is a major risk
factor for developing heart disease. What many don't know
is that people with diabetes may be at a higher risk for
developing high blood pressure and lipid abnormalities
(high cholesterol and triglyceride levels in the blood),
which in turn puts them at greater risk of heart disease.
 
While people with diabetes can't necessarily change the fact
that they have diabetes, they can still do plenty to reduce
the risk factors associated with heart disease.
 
"There are several things you can do to enhance your heart
health," says Donna Lillie, National Director, Research and
Professional Education, Canadian Diabetes Association.
 
"Staying physically active, quitting smoking, eating a
healthy balanced diet, good control of blood sugar and
blood pressure levels, as well as visiting your doctor
regularly for check-ups are just some simple ways."
 
Diabetes is only one risk factor for heart disease.
The modifiable risk factors that influence your risk
of heart disease include:
 
- Elevated lipids (blood fats) - cholesterol and triglycerides
- High blood pressure
- Smoking
- Overweight
- Being physically inactive
 
The more you do to reduce your risk factors the more
you can help reduce your risk for heart disease.
 
TIPS TO TAKE CARE OF YOUR HEART
 
The best defense against heart disease is prevention. If you
have diabetes, work with your health care team on the following:
 
Keep your blood sugar as close to target levels as possible.
High levels of blood sugar damage the small and large blood
vessels over time and may cause serious complications.
 
Quit smoking. Smoking narrows blood vessels over time. It can
also increase the levels of bad cholesterol in your blood.
 
Work to keep your blood pressure under control.
 
Keep your cholesterol and triglyceride levels in the target
range set by your doctor. High cholesterol may damage your
blood vessels and can lead to heart disease. If you cannot
lower your cholesterol level by lifestyle changes alone, your
doctor may prescribe a cholesterol-lowering medication.
 
Regular daily exercise, such as walking or swimming, and
which uses your heart, lungs, and large muscles, can improve
your cholesterol levels and your overall cardiovascular fitness.

HOW DREAMFIELDS PASTA WORKS
 
Dreamfields patent-pending process adds a unique blend
of protein and inulin fiber (a 100% natural prebiotic
fiber found in common foods such as Jerusalem artichokes
(sunchokes), asparagus, garlic, raisins and chicory root)
to premium durum wheat semolina.
 
This results in a pasta with 5 grams fiber per serving
(about twice that of regular pasta), a 65% lower glycemic
index (GI) than regular pasta (Dreamfields GI = 13; regular
pasta GI = 38), and 5 grams digestible carbohydrates per
serving, which results in a lower blood glucose rise
compared to that following consumption of regular pasta.
 
Of the 41 grams carbohydrate in each serving of Dreamfields
pasta (2 oz. dry or about 5 oz. cooked), all but 5 grams
carbohydrates are protected from being absorbed due to
the unique patent-pending process used to make the pasta.
 
The unique blend of protein and inulin are balanced to
provide functional properties to modify the product's
microstructure and influence starch granule permeability.
A matrix is created within the semolina flour, thereby
preventing starch-digesting enzymes from cleaving digestible
carbohydrates into absorbable monosaccharides.
 
The carbohydrate protected from digestion can pass to
the colon where it is fermented, providing many of the
benefits of fiber. Aside from reducing starch digestibility,
the changes to the pasta's microstructure and starch granule
permeability reduce the GI.
 
Each batch of pasta undergoes rigid clinical testing to ensure
that there truly are only 5 grams of digestible carbohydrate per
serving and to ensure the accuracy of the stated GI level.
 
The testing method includes measuring blood glucose response to
the whole food in humans to establish the pasta's glycemic load.
This clinical testing is conducted at AMK Clinical Research
Facility in Gainesville, Fla., an independent laboratory.

HIGH BLOOD PRESSURE
When the blood flows through the vessels at a greater
than normal force. High blood pressure strains the
heart; harms the arteries; and increases the risk
of heart attack, stroke, and kidney problems.
 
RETINOPATHY
A disease of the small blood vessels in the retina of the eye.
 
PERIPHERAL VASCULAR DISEASE (PVD)
Disease in the large blood vessels of the arms,
legs, and feet. People who have had diabetes for a
long time may get this because major blood vessels
in their arms, legs, and feet are blocked and these
limbs do not receive enough blood. The signs of PVD
are aching pains in the arms, legs, and feet (especially
when walking) and foot sores that heal slowly. Although
people with diabetes cannot always avoid PVD, doctors
say they have a better chance of avoiding it if they
take good care of their feet, do not smoke, and keep
both their blood pressure and diabetes under good control.
 
FATTY ACIDS
A basic unit of fats. When insulin levels are too
low or there is not enough glucose (sugar) to use
for energy, the body burns fatty acids for energy.
The body then makes ketone bodies, waste products that
cause the acid level in the blood to become too high.
This in turn may lead to ketoacidosis, a serious problem.
 
FRACTIONAL URINE
Urine that a person collects for a certain period
of time during 24 hours; usually from breakfast to
lunch, from lunch to supper, from supper to bedtime,
and from bedtime to rising.

Is fiber content reduced when vegetables are cooked?
 
ANSWER:
 
No, cooking doesn't lead to loss or destruction of vegetables'
dietary fiber. The only reason fiber may change is if you
remove the peel when cooking, which will reduce fiber content.
 
In fact, because vegetables often "cook down," meaning
that a larger portion when raw becomes smaller when
cooked, cooked vegetables may even be slightly higher
in fiber than an equal portion of its raw form.
